We take Groundhog Day seriously around here. When I told my husband I have a church meeting to go to tomorrow night, his response was, “Why would they have a meeting on a holiday?” I’m not sure the rest of the world cares about Groundhog Day quite as much as we do, but here is a fun Groundhog Day recipe for celebrating the often-forgotten holiday.
Dirt Pie
You need:
1 c. powdered sugar
1/2 stick softened butter
1 (8 oz.) pkg. softened cream cheese
2 boxes instant vanilla pudding
3 1/2 c. milk
1 (12 oz.) container cool whip
Blend pudding, milk and Cool Whip together.
Combine pudding and cream cheese mixture together until lumps are smooth.
In 9 X 13 pan or individual cups, layer the cookie mixture and pudding mixture, leaving enough cookie mixture for the top. Decorate with creepy little drawings of groundhogs.

I’m hoping for an early spring, but that has only happened a few times in the history of Punxsutawney Phil. Cross your fingers for no shadow tomorrow morning!
